To determine the best alternatives for each product, we defined a precise scientific method based on statistical tools, divided into three stages:
Compile available sensory and physicochemical data
Process existing data
Collect additional sensory data and select alternatives from our product portfolio.
Based on our physicochemical and sensory database, we first selected the most discriminating, relevant criteria (scalability, permeability, melting point, viscosity, etc.) to identify alternatives.
For this purpose, analysis of variance (ANOVA) was performed to confirm the distinguishing characteristics of these parameters.
Secondly, the data were statistically processed in order to filter out the components. The resulting proximity matrix makes it possible to identify esters whose properties are closest to those of the product to be substituted.
Finally, to ensure the accuracy of our sensory data, we evaluated each possible alternative directly against the product to be replaced.
